Hey there and welcome!
I have an 83, and have done a LOT of research on wheels and tires. I currently have the man-hole covers which I originally did not like at all and now have come to enjoy their uniqueness. You are likely going to have to compromise to use anything other than stock rims.
Item1 - there is only one or two Porsche rims you can use similar to yours, that has the same offset and would sit as the engineers designed them on your car. One is RARE because it belongs to the last year or two of the GT and GTS. So if you can find a set, you are golden,,, but likely they will not the cheap. Also you can also probably get a set of man-hole covers (the ones with the slots like mine) by looking around. There is also one aftermarket option in that there was a project to make large rim Phone Dials like yours. You can search for Phone Dials and should probably be able to find that info easily. Let me know if not.
Item 2 - Can other Porsche rims fit? - yes... BUT, most will not have the same offset and thus the geometry of the design of your car will also be slightly off
Item3 - Can other aftermarket rims fit? - yes...BUT, same as above, so be careful about how big (might have to flare wheel wheels for example) and you will still have the offset issue.
The deep offset we have puts the wheels underneath the car more, by design, for a purpose. So yes you can change the Phone dials, depending on the look you are going for and drivability you will have to make some concessions to get the look you want. If you do not mind that and are not into the keeping classic kind of thing, then you can indeed find something. This site and others have plenty of recommendations for you. It is a little harder with 82, 83 etc because our offsets are more than some later models, so make sure you are not getting something that is fine on another Shark but not so great on yours, or needs body adjustments to make them fit.
Here some Porsche options based on some searches I have done in the past
Porsche -
1994 GTS wheels - 65mm offset! 8 in front 10 inch rear
Club Sport twists or Turbo Twists, 996 Carrera 2 twists
Carrera III's - 8 in and 10 in, 58 and 57 offsets
Cup II - 7.5 inch has 63 offset!

PORSCHE 928 GTS (1993 and 1994 up to VIN 0079)

17" C2 Turbo Style, AKA Cup 1Wheels = Front -7.5x17 / Rear - 9x17
Offset = Front - 65mm / Rear - 55mm

Tires = Front - 225/45 17 / Rear - 255/40 17

To clarify a couple of items in your post:
  • Most 94 and all 95 GTS wheels - these were Cup II in 7.5x17ET65 front and 9x17ET55 rear. There were no OE Cup II 10" width rears, but 18x10's were available as aftermarket replicas.
  • The Carrera III offsets are reversed in your post - the 8" fronts are ET57 and the 10" rears are ET58.

You are correct about the 93 - early 94 Cup I.
